The goal | Understanding the characteristics of microorganisms important for food production, food spoilage and pathogenes. Determining the conditions for the production of primary and secondary metabolites, predicting the activity of microorganisms affected by various environmental factors, and based on that, forming models related to the microbiological safety and sustainability of various food products. | |||
The outcome | Creation of predictive models of microbiological safety and sustainability of food products; application of software suitable for predictive modeling in food microbiology; defining the application of specific models in different scenarios that occur in food depending on the influence of environmental factors. | |||
Contents | ||||
Contents of lectures | Characteristics of microorganisms important for industrial food production. Growth of spoilage microorganisms as well as pathogenic species. Predictive modeling of microbiological response in food depending on microorganism growth factors. Application of appropriate databases and software programs necessary in the creation of various models. | |||
Contents of exercises | Experimental work (demonstrations or student work) in order to master the detection techniques of different groups of microorganisms, their metabolic activities, predictive modeling of the microbiological response of microorganisms responsible for the production, safety and sustainability of food, application of appropriate software programs necessary for predicting specific cases. | |||
