    The goal Lactic acid bacteria as probiotics; history of probiotics; microbiota of the gastrointestinal tract (GIT). Microbial and metabolic interactions in the GIT. Mechanism of action and health effects of probiotics. Mechanism of action and health effects of prebiotics. Selection of potential probiotics, evaluation of the possibility of application in food production, viability in food.
    The outcome The student should: describe and explain the characteristics of different genera of probiotic bacteria master and demonstrate methods of their isolation and identification, select and apply methods for determining probiotic criteria analyzes and detects their presence in food
    Contents
    Contents of lectures History of probiotics; Characteristics of LAB, used as probiotics; Health effects of probiotics and mechanisms of action. Microbiota of the gastrointestinal tract and microbial interactions; Methods for determining technological and probiotic criteria, antimicrobial effect on pathogens, antibiotic resistance, etc. The role and importance of prebiotics and joint application with probiotics.
    Contents of exercises Practical teaching Techniques for the isolation of important probiotic species of lactic acid bacteria, methods of determining important technological parameters for use in food, test methods probiotic criteria for potential probiotic strains, methods for separation and determination number of probiotics in food
