    The goal Introduction with by-products in the dairy industry from the aspect of production viability, as well as modern technological processes in the production of dairy by-products, such as concentration, drying, and application of membrane techniques.
    The outcome The student should show the knowledge / ability to: understand the role and significance of by-products in the dairy industry; the basic principles of modern technological procedures in the processing of dairy by-products; more complete and more efficient utilization of the dry matter of milk in the technological processes in which the by-products are produced in the dairy industry
    Contents
    Contents of lectures Role and significance; nutritive and technological value of the dairy by-products (whey, skim milk, buttermilk, permeate); Modern ways of processing and application of the dairy by-products in the food industry.
    Contents of exercises It will be realized through laboratory practical work: production of casein and caseinates in laboratory conditions, as well as analysis of basic parameters of whey, skimmed milk and milk based products (caseins); students will be trained in performing analyzes and interpreting the obtained results.
