| Contents of lectures | Technological and functional properties of colloidal milk system; thermal stability of milk; the mechanism of milk protein coaggregates formation; the influence of high pressures and ultrasonic treatments on milk constituents; technological and functional properties of milk constituents: proteins (casein and casein based products, whey proteins and whey protein products); milk fat, lactose. | |||
