    Contents of lectures Characteristics of microorganisms in industrial production: aerobic and anaerobic processes, (an)oxidative fermentations. The role of microorganisms in the processes of food production; microbial decomposition of proteins, polysaccharides, fats. The role of microorganisms in food, the diseases they cause and some food spoilage. Microbiological control of production according to regulations
