    The goal Introducing students with modern scientific and practical approach in the field of technological and functional properties of milk and developing a multidisciplinary approach in theoretical and practical work
    The outcome Students should show the knowledge / ability to: apply milk-based ingredients based on their functional characteristics; improve the quality of milk products; introduct innovations in production; develop critical opinions and creative thinking; interpret the results of milk products testing; present the acquired knowledge through written and oral forms of presentation.
    Contents
    Contents of lectures Technological and functional properties of colloidal milk system; thermal stability of milk; the mechanism of milk protein coaggregates formation; the influence of high pressures and ultrasonic treatments on milk constituents; technological and functional properties of milk constituents: proteins (casein and casein based products, whey proteins and whey protein products); milk fat, lactose.
    Contents of exercises Simulation of the processes in the production of dairy products; introduction to independent study of literature, presentation of results and conclusions.
