    The goal Acquiring knowledge of microbiological methods of isolation and identification of groups of microorganisms important for food production and control; microbiological control and product quality testing; ability to perform isolation of bacteria, yeasts and molds, their identification, production control and microbiological analysis of the correctness of products according to legal regulations.
    The outcome The student should: demonstrate an understanding of the characteristics of different groups of microorganisms important for food production and control master the methods of their isolation and identification, examine the microbiological correctness of the product evaluate the obtained results independently and in a group discussion,
    Contents
    Contents of lectures Characteristics of groups of bacteria important for food control and product quality: total number, aerobic and anaerobic, lipolytic, coliform, psychrotrophic, heat-resistant, acidogenic, proteolytic and yeasts and molds; properties on the basis of which they can be separated during isolation; production control methods, pathogenic bacteria identification methods, according to legal regulations.
    Contents of exercises Practical exercises in the mentioned areas: methods of isolation and identification of the mentioned different groups of bacteria, pathogenic bacteria, yeasts, molds, production control methods.
