    The goal The course allows the student to acquire: knowledge of the principles and application of qualitative and quantitative chemical analysis of food samples, calculation of basic quantities and parameters important for chemical analysis; skills of experimental work; ability to apply classical and selected instrumental methods of chemical analysis.
    The outcome After completing the course, the student should: understand the principles, importance and possibilities of applying analytical methods; computationally solves tasks in food analysis; master the techniques and operations necessary for performing chemical analysis; has the ability to choose techniques that can be used for chemical analysis, interpret and evaluate the results of chemical analysis.
    Contents
    Contents of lectures Principles, task and field of application of analytical chemistry; chemical equilibrium in solutions of acids, bases, salts; buffer systems; heterogeneous equilibrium; sampling and preparation of samples for chemical analysis; principles, division and application of quantitative methods: gravimetric, titrimetric, potentiometric and spectroscopic methods for food analysis.
    Contents of exercises Qualitative chemical analysis. Gravimetry: precipitation and volatilization methods. Volumetrics: a) acid-base titration methods; b) methods of precipitation; b) methods of building the complex; g) oxido-reduction methods. Potentiometry. Spectrophotometry. Interpretation of results with mathematical statistics.
