The goal | To provide the student with the basic concepts and principles of sanitation of food plants and to enable a logical connection of theoretical foundations and practical application of means for sanitation. | |||
The outcome | Acquiring knowledge in the field of contamination sources and sanitation of food industry facilities; the ability to apply and test the activity of detergents, disinfectants and personal hygiene products; pest control; ability to use literature and other information; teamwork; critical and creative thinking; presentation of acquired knowledge and evaluation of the teaching process. | |||
Contents | ||||
Contents of lectures | Basic principles of sanitation, sources of contamination in the food industry, employee hygiene, washing and sanitizing agents and methods of action, properties of food contact surfaces, biofilms and their removal, the importance of water for sanitation, the layout of equipment for the application of proper sanitation, proper air flow, pest control. | |||
Contents of exercises | Determining the effectiveness of sanitation agents, practical determination of microbiological contamination in plants for the production of food products, monitoring the effectiveness of the application of certain sanitation agents. | |||
