    The goal The course should enable the student to acquire 1. knowledge about structure, basic chemical and physical properties of natural organic compounds. 2. skilled on the natural isolation organic compounds which are used in food technology. 3. ability to solve specific problems problems in the field of chemistry of natural products.
    The outcome After completing the course, the student should: 1. Understand the structure, chemical and physical properties of natural organic compounds. 2. Uses isolation and characterization techniques. 3. Defines and explains the basic role of organic compounds used in food technology. 4. Solves concrete problems in the field of natural organic compounds. 5. Analyzes isolated natural organic compounds.

    Contents of lectures 1. Amino acids, polypeptides and proteins. 2. Carbohydrates 3. Lipids 4. Nucleic acids 5. Hormones 6. Alkaloids 7. Antibiotics.
    Contents of exercises 1. Chemical reactions and isolation of proteins, 2. Chemical reactions and isolation of carbohydrates. 3. Isolation of fatty acids and saponification of fats and oils. 4. Isolation of terpenes 5. Isolation of steroids 6. Isolation of alkaloids 7. Isolation of DNA from natural material.
